Vegan Peanut butter-Tahini Millionaire Bars

These Millionaire Bars are an instant hit. They've got a delicious peanuty base with a fudgy, gooey middle and a super rich chocolate topping. They are very easy to make as long as you have a strong food processor. The great thing about them is that you don't have to bake them in the oven!!
They are served cold. Perfect for summer days.
Ingredients for the base:
200 gr. ground almonds
8 Medjool dates
2 tablespoons of smooth peanut butter ( use 100% peanut cream)
pinch of sea salt
1 teaspoon of cinnamon
Ingredients for the filling:
4 tablespoons of melted coconut oil
100 gr. tahini
3 Medjool dates
2 tablespoons of maple syrup
pinch of sea salt
Ingredients for the topping:
dark chocolate
toppings ( optional- for example raspberries, nuts or coconut chips
How to make the Millionaire Bars:
1. To make the base, put the almonds, dates, cinnamon, peanut butter and salt into your food processor and pulse until the mixture sticks together. Place the mixture into a prepared tin and press down until compact. Now put it in the freezer while making the filling.
2. For the filling, put the coconut oil together with the dates, maple syrup and tahini into a small pan over low heat and cook until the coconut oil has melted. Then place the filling into your food processor and blend until it becomes very smooth. Pour the filling over the base, Place the tin back to the freezer and leave it there for 1 hour until set.
3. For the chocolate topping, melt some dark chocolate and put it on top of the filling. Decorate it with toppings such as raspberries or nuts if you want to. Now place it into the fridge for at least 1 hour or until ready to serve.
