Vegan Chili Bowl with Cashew Sour Cream and Quinoa Tortillas

This chili bowl is one of my favorite dishes. I love to make a big portion during the week, which I can put in the fridge for around 1-3 days. It's completely vegan, simple, super delicious and the combination between the warm chili and the cold sour cream makes it very special. Of course white rice is a great side dish too.
Ingredients for the chili:
1 onion
canned corn
1 can of kidney beans
1 tomato
1 garlic clove
1 can of chopped tomatoes
olive oil
oregano
cumin
chili flakes
juice of one lemon
coriander
salt
pepper
optional: chickpeas, red lentils
How to make the chili:
Chop the onion and put it into a pan with some olive oil. Add the garlic glove and let it cook for some minutes.
Add cumin, oregano, salt and pepper to the pan. Chop the tomato and add it as well. Don't forget to stir.
Now add the canned corn, the kidney beans and the can of chopped tomatoes. Stir everything and let it cook for at least 10 minutes. Now add the lemon juice, some coriander and the chili flakes. Taste the chili to see if it needs more salt, cumin or other spices.
How to make the tortillas:
Soak a cup of white quinoa in warm water and let it sit overnight.
Put the quinoa (without the water) into your food processor and add salt, pepper, squeeze of lemon and the spices you like.
Mix it till it gets smooth. If it's still too sticky, just add a splash of water.
Now heat some olive oil in a pan. Take a tablespoon of the mixture at a time to cook in the pan. Cook each side for 1 minute and you're done.
How to make the cashew sour cream:
Soak 200 gr. of cashews in hot water for about 10 minutes.
Put them in your food processor and add a tablespoon of nutritional yeast, salt and pepper.
Mix it till it get's very smooth. You need a strong food processor for this.
optional: you can also add some lemon juice and fresh mint to the sour cream. It gives it a great touch and the combination between both of the ingredients makes the cashew cream super fresh and perfect for sunny days.
