Fluffy Vegan Blueberry-Vanilla Muffins

These light and airy muffins are loaded with juicy blueberries and extra vanilla goodness! I love to make them when I have friends over.
Ingredients:
- Fresh or frozen Blueberries
- Vanilla extract
- 75 gr. of brown sugar ( you can also use maple syrup)
- Soy yoghurt ( I used coconut)
- Aquafaba from 1 chickpea can
- 1 Lemon
- 150 gr. of oat flour
- 1 tablespoon of baking soda
- A pinch of salt
- 2 shots of almond milk
- 1 teaspoon of apple cider vinegar
How to make the muffins:
1. Stir all the dry ingredients together in a bowl
2. Now add the aquafaba with the milk, the vanilla extract, the apple cider vinegar and a squeeze of one lemon to a different bowl. Mix the ingredients together and then put them in the bowl with the dry ingredients.
3. Now add first the yoghurt and then the blueberries to the mixture. Stir again
4. Put the mixture into a muffin tin and bake them for 25 minutes at 180 degrees.
5. Enjoy them when they're still warm! They are also very good with vegan coconut ice cream.
